Ingredients (for 2 people):
800 grams of Argentine red prawns
2 oranges 250 ml of good olive oil 1/2 teaspoon Bora Bora Sea Salt Tahitian Vanilla
pepper from the grinder
2 egg yolks
1 teaspoon mustard
2 cloves of garlic
1/2 teaspoon sugar
Preparation:
1. For the marinade, squeeze an orange.
2. Peel off a clove of garlic and add it to the orange juice.
3. Mix with 100 ml olive oil, stir in pepper and vanilla salt.
4. Pour the marinade over the washed red prawns and let everything stand for at least
two hours.
5. For the orange aioli, mix two egg yolks at room temperature with a teaspoon of
mustard and half a teaspoon of sugar.
6. Mix up the olive oil with a hand blender with a very thin stream. 7.
7. Rub the peel of half an organic orange, then squeeze out the juice and stir in. Mix everything up again with the hand blender.
8. Preheat the grill to 220 to 250 degrees direct heat.
9. Remove the red prawns from the marinade, drain a little and place on the grid.
10. Turn after five minutes and grill over direct heat for another five minutes
11. Serve the grilled red prawns with orange ailoi on preheated plates. A lamb's lettuce goes well with it.
